Loaves made with my new organic unbleached stoneground flour. The loaves were shaped and proved in plastic cane baskets which produced the coolest squiggly lines on top. The flour was a creamy off-white colour, which resulted in a rustic coloured crumb, as you can see from the crumbshot. As an experiment, I baked these loaves on a non-fanforced setting. The result was a much more consistent browning at the expense of a little bit of ovenspring.
