Sunday Morning Baking

Made up a batch of 75% hydration spelt dough last night, and allowed it to “bulk ferment” (thanks Chris!) overnight. This morning, bleary eyed and sleepy, I was playing around with shaping, with mixed success.

Escher Epi – shaped the initial log into a ring, proved on a floured teatowel, pulling some of the teatowel through the middle of the hole to stop it closing up. Quite happy with this!

This next loaf was supposed to resemble the Greek bread Christopsomos, with ornate scrolls on either side of the loaf. Unfortunately, it just ended up looking..well…rude. 😉
